How to infuse honey using ALTA 1

With its natural sweetness and smooth texture, infused honey is more than just a sweetener; it’s a gateway to a world of flavor and creativity.

Whether you’re enhancing your wellness routine or exploring new flavors in the kitchen, infused honey is your ticket to a deliciously versatile and healthful experience.

Ingredients

  • 7g–1oz of fresh or coarsely ground dried herb
  • 2 cups (around 16oz) of honey

Equipment

  • Your ALTA1 machine.
  • A strainer.

Instructions

  1. Place the fresh or coarsely ground dried herbs into the Kettle. (If using fresh herbs, start with the DRY cycle. For flowers, select the ACTIVATE cycle instead of the DRY cycle.)
  2. After the DRY or ACTIVATE cycle is complete, add honey into the Kettle, and close the lid
    securely.
  3. If you’re infusing honey with flowers, don’t forget to mix 1-2 teaspoons of lecithin with the honey before starting the infusion.
  4. Set your ALTA 1 to:
    ALTAFUSE mode: 140℉ for 20 minutes → cool with the lid open for 20 minutes → repeat 140℉ for 20 minutes.
    INFUSE mode: 120℉ for 120 minutes.
  5. Once the infusion is complete and the honey is still warm, strain it into a clean, airtight container, like a glass jar, using the strainer to capture every bit of your infused honey.
  6. Store your honey in a cool, dry place, or for longer-lasting freshness.

  • Drizzle on Breakfast - it can be toast or bagels, pancakes and waffles, yogurt or oatmeal
  • Sweeten Beverages - it can be your tea, coffee, or cocktails.
  • Savory Dishes - use it as a base for glazes and marinades for meats like chicken, pork, or salmon; or mix it with olive oil, vinegar, and mustard to create a unique and delicious salad dressing.
  • Baking and Desserts - incorporate it into cakes, cookies, or bread ; drizzle over ice cream or gelato for a gourmet touch, or use it as a base for making your own honey-flavored ice cream.
  • Health and Wellness - use infused honey in homemade throat lozenges or as a soothing addition to herbal teas for colds and sore throats; or apply infused honey as a natural face mask for its moisturizing and healing properties, especially when infused with skin-loving herbs like chamomile or lavender.
